I always place my floor jack at the center front where the crossmember bolts to the lower radiator support. Just be sure you get the lip of the jack around the back of the bolts and you'll be golden

Rewire it all bro - you got the interior half gutted anyway. It's the only way to be sure you are starting with everything working. Put some good quality wire in there and call it a day.
